Visit the TADAFUSA Japanese Kitchen knives factory

TADAFUSA Open Factory
The Japanese Kitchen knives are indispensable tools for the preparation of traditional Japanese cuisine which is recognized by UNESCO as Intangible Cultural Heritage. Some types
of knives for specific kitchen tasks, such as Deba (thick blade for fish with bone), Yanagiba (slim and long blade for Sashimi) are commonly used even in the household.

So, it is impossible to know how many types of knives are available for professionals. But in these days not many craftsmen have the traditional techniques to produce these special knives. In Tsubamesanjo which has 400-year history of blacksmith, there is a factory called TADAFUSA, one of a few factories which boast a high level of techniques to produce them still now.

TADAFUSA has strictly adhered to the hand-made high-quality knives by skilled craftsmen. It has a good reputation in the world for its products. Some factories in Tsubamesanjo allow visitors to tour their factories and learn the history and the background factors behind the achievement of high quality products. It calls “open factory”. If you visit TADAFUSA, you will hear the echoes of blacksmiths using spring hammers to forge metal and grinders to sharpen knives, through having an exciting experience and witnessing the craftsmen’s work ethics, you must sense that they take pride in their work.
